和食では、食材本来の味わいや舌触りなどの繊細な部分にまでこだわります。そのため調理する食材や部位によって、包丁の種類を持ち替えるのが一般的です。鮮度が命である魚の身をカットすることに特化した包丁が、柳刃包丁（刺身包丁）。 柳刃包丁（刺身包丁）の特徴は、細長くて先端が尖った形状。そして多くが片刃に作られていることです。 非対称な形状であるため、右利き用と左利き用が存在するのも特徴の一つ。 伝統的な片刃包丁 片刃の良さは、第一に切れ味の鋭さがあげられます。通常の包丁は表裏両面から削ることで刃先を尖らせていますが、片刃の名の通り、裏面からのみ削り出しているため刃先が非常に薄く鋭い切れ味となります。 長い刃を利用して一気に引くように切るため、断面の細胞を崩さず、切り口はなめらか。舌触りも良いので、お刺身がより美味しく味わえます。 細部まで再現 さらに、刃の裏面は完全な平面ではなく凹んだ状態になっています。これを裏スキと呼びます。 この裏スキのおかげで食材との接地面積が少なくなり、摩擦が軽減され、より綺麗な断面に仕上がり、お刺身のカドが立ちます。 またこの形状は、食材を切った時の身離れを良くする効果があり、空気の通り道ができるので食材がくっつきにくくなります。 今回の「matou-磨刀-」でもセラミック工場の熟練技術者の方と共に、何度も試行錯誤を重ね伝統的な造形の美しさを再現しました。 特徴⑤　扱いやすさを追求した形状 家庭でちょうど良い長さ 「matou -磨刀-」では、七寸柳（刃渡215mm）のサイズを採用。日本の一般的なキッチンで扱いやすいサイズで設計しました。
