それは食材や部位に適した調理方法を行うことで本来の味わいを損ねないためであり、素材の良さを最大限に引き出す日本食の考え方からきているとも言われております。 幅広い食材に万能な包丁も魅力的ですが、私たちgoyemonは食材に最適な包丁を使い分ける魅力も知ってほしいと思っております。道具を使い分けるこだわりとひと手間は、日本伝統の美しい所作の一つです。 弱点をカバーしたセラミック包丁の最適解
