Made from heat-resistant glass, it can be used with boiling water and heated in a microwave oven. Not only hot drinks such as hot milk, coffee, and cocoa, but also soups, Chawanmushi (steamed egg custard), and hot sake can be enjoyed easily. The double-wall glass structure prevents the temperature of the drink from escaping more easily than conventional glasses. Cold drinks stay cold longer and hot drinks stay hot longer, allowing you to enjoy the fresh taste for a long time. By deliberately increasing the distance between the inner and outer glass walls, the functionality of the double-wall glass is maximized. ⑤　Completely new design. KIRIKO is a glass-cutting technique that involves carving intricate patterns into the surface of glass. The word combines “切” (kiri) meaning “to cut,” and “子” (ko) — derived from “粉” (powder) — referring to the fine glass dust created during the cutting process. The shadows cast by the cut glass trapped inside add color to the dining table and evoke a sense of nostalgia. Traditionally, cut glass processing on heat-resistant glass used in double-wall glasses has been considered technically difficult. However, with the desire to create a product that brings the charm of cut glass closer to everyday life, we experimented repeatedly and finally achieved an update to the “next-generation cut glass” by incorporating modern double-wall technology. The cut glass design features the Shippo pattern — a motif made up of overlapping circles. This pattern symbolizes harmony, good fortune, and the interconnectedness of people, with shapes that evoke treasures and flower petals. Originally created over a century ago, the Shippo pattern continues to appear in a wide range of decorative arts today. The base of the Fuwan bowl features a chrysanthemum (kikka) motif. This elegant pattern, beloved by aristocrats since the Heian period, carries a refined and noble meaning—true to the flower’s symbolic language of “nobility.” KIN-AKA / RURI 金赤 / 瑠璃 【Kin-aka（金赤）】 The name Kinaka — literally “gold red” — comes from the traditional glassmaking practice of adding gold to enhance red coloration. Inspired by that story, we’ve expressed the shade as a soft, delicate hue. 【Ruri（瑠璃）】 Ruri, or lapis lazuli, is one of the seven treasures depicted in the Shippo (Seven Treasures) motif. This vivid and translucent blue was inspired by a line from The Tale of the Bamboo Cutter, written in the early Heian period: "Ruri-colored water flowing down from the mountains." We aimed to capture that image in a clear, radiant shade of blue. YAMABUKI / HAIAO 山吹 / 灰青 【YAMABUKI（山吹）】 A vivid yellow with a hint of red, reminiscent of the YAMABUKI (Japanese kerria). Its warm tone evokes the glow of the setting sun — a color that soothes away the fatigue of the day. 【HAIAO（灰青）】 A cool, bluish-gray reminiscent of a Japanese tachi (long sword). Its rugged yet refined tone brings a modern presence to the dining table. BENIFUJI / ROKUSHOU 紅藤 / 緑青 【BENIFUJI（紅藤）】 A color that was popular in the late Edo period. Created by lightly dyeing with indigo as a base, then layering with safflower red, it results in a soft, reddish wisteria hue. Though rich and elegant in tone, it also carries a gentle warmth. 【ROKUSHOU（緑青）】 A color formed by the oxidation of copper — rokushou (verdigris). Traditionally used in Japanese architecture and sculpture, this iconic green-blue hue has long been cherished for its refined beauty. When paired with BENIFUJI, the combination evokes the gentle brilliance of hydrangeas that brighten the melancholy of the rainy season. KOHAKU / KOKUYOU 琥珀 / 黒曜 【KOHAKU（琥珀）】 A lustrous, deep amber hue. It evokes the feeling of cut glass encased within timeless amber, offering a captivating depth that changes with every angle of the light. 【KOKUYOU（黒曜）】 The translucent black takes its name from obsidian, a type of volcanic glass. そんな思いで「matou-磨刀-」が生まれました。 特徴①　驚くほど軽く鋭い切れ味 ・硬度はステンレスの約2倍 ・切れ味の持続は200倍超 独自の製法で実現 今回「matou-磨刀-」の刃に採用したのはセラミック刃材です。これは、金属の刃ではなく陶磁器の素となる粉末を焼き固めて生成した刃で、軽く鋭い切れ味でスッと切れるのが特徴的です。 その中でも今回のセラミック刃材はフォーエバーテクノロジーによる独自の製法で高密度化＝高耐摩耗性を実現したセラミックナイフ（スーパーセラミック刃材）です。硬度はステンレスの約2倍。切れ味の持続は200倍を超えます。（CATRA社データー） 　＊CATRA（Cutlery&Allied Trades Research Association） ISOに準拠した英国にある刃物の耐摩耗試験を行っている世界基準の機関です。 高密度製造法 高圧プレス法品のスーパーセラミックは超高密度化を実現。 粉末成形機メーカーでもあるフォーエバー社の長年にわたる成形技術（フォーエバーテクノロジー）を搭載。多気孔のセラミックに比べ、5倍もの超耐摩耗性・永切性能が世界規格カトラ社実験で証明されています。 スーパーセラミックはこの高圧力が一般他社品の約10倍以上（1平方cmあたり約3tの高圧力）の高圧・高密度製造法であることが証明されています。 特徴② 新素材でメンテナンス要らず 研ぎ要らず｜錆びない｜塗らない 研ぎ要らず スーパーセラミックはダイヤモンドでなければ研げないほどの硬い材質なため、摩耗しにくく、購入したての鋭い切れ味が長持ちします。 従来の刺身包丁と異なり切れ味を維持するために頻繁に研ぐ必要がないので、本格的な切れ味ながらも気軽に使っていただけます。 錆びない セラミックは金属ではなく、陶磁器の一種なので錆びることがありません。 さらに酸やアルカリにも強く、レモンなど酸味のあるフルーツを切っても刃が腐食することもありません。 塗らない 錆を防ぐため金属製の刃物は保管する際に椿油などの植物性油を塗り込む必要があります。 セラミックは錆びることがないため、特別なケアは必要ありません。 料理を終えたら中性洗剤で洗い、水気を拭き取ってそのまま保管することができるので、普段使いにも適した包丁です。 また、「matou-磨刀」は、漂白剤でお手入れすることが可能です。刃や柄の変色が気になった際は、薄めた漂白剤に、定期的に浸すことで、新品のような輝きを保ち続けることができます。 特徴③　鉄の味が食材にうつらない 繊細な風味を最大限活かす セラミックは金属特有の匂いや味がありません。 食材に金属の匂いがつくことがないので、白身魚などの繊細な風味を最大限活かすことができ、誰でも「おいしく」お刺身を切ることができます。 また、ニンニクなどの強い匂いも刃に残さず洗い流すことができるため、他の食材に味が移ることも防ぎます。 特徴④　「おいしく」切れる秘密 お刺身を切ることに特化 和食では、食材本来の味わいや舌触りなどの繊細な部分にまでこだわります。そのため調理する食材や部位によって、包丁の種類を持ち替えるのが一般的です。鮮度が命である魚の身をカットすることに特化した包丁が、柳刃包丁（刺身包丁）。 柳刃包丁（刺身包丁）の特徴は、細長くて先端が尖った形状。そして多くが片刃に作られていることです。 非対称な形状であるため、右利き用と左利き用が存在するのも特徴の一つ。 伝統的な片刃包丁 片刃の良さは、第一に切れ味の鋭さがあげられます。通常の包丁は表裏両面から削ることで刃先を尖らせていますが、片刃の名の通り、裏面からのみ削り出しているため刃先が非常に薄く鋭い切れ味となります。 長い刃を利用して一気に引くように切るため、断面の細胞を崩さず、切り口はなめらか。舌触りも良いので、お刺身がより美味しく味わえます。 細部まで再現 さらに、刃の裏面は完全な平面ではなく凹んだ状態になっています。これを裏スキと呼びます。 この裏スキのおかげで食材との接地面積が少なくなり、摩擦が軽減され、より綺麗な断面に仕上がり、お刺身のカドが立ちます。 またこの形状は、食材を切った時の身離れを良くする効果があり、空気の通り道ができるので食材がくっつきにくくなります。 今回の「matou-磨刀-」でもセラミック工場の熟練技術者の方と共に、何度も試行錯誤を重ね伝統的な造形の美しさを再現しました。 特徴⑤　扱いやすさを追求した形状 家庭でちょうど良い長さ 「matou -磨刀-」では、七寸柳（刃渡215mm）のサイズを採用。日本の一般的なキッチンで扱いやすいサイズで設計しました。 市販の包丁スタンドにも収まる長さであるため、刺身包丁を初めてご購入する方にも保存場所に困らないサイズ感となっております。 負担を軽減するための重さ お刺身をカットする時は、包丁の重さを利用して引き切るため、肩や腕の力を入れすぎないのがコツです。「matou-磨刀-」は通常のセラミック包丁よりも厚く設計しているため、適度な重さとなり、切る時の負担を軽減します。 手馴染みの良い堺製の木柄 柄には伝統的な「水牛柄」を採用しました。口輪に水牛の角、持ち手には木材が使用されている木柄のことです。水牛の角と木材が近しい柔らかさであるため、長年使っていてもその境目に段差が付きにくいという利点があります。使っていくうちに自分の握り心地に合わせて経年変化していきます。 天然の木材を、大阪 堺の職人さんに一つ一つ丁寧に磨き上げてもらっております。 同じものが２つとない、自然の表情をぜひお楽しみください。 また形状は八角型に仕上げております。手に馴染み、握りやすさを追求した一本となっております。　 「matou-磨刀-」は細部の造形にも無駄がなく、美味しさと使い勝手を考慮した形状となっています。 通常、和包丁の名入れは鏨（たがね）という鋭角刃のついた金属の棒と金槌でとんとん叩きながら名前を刻んでいきます。 彫るというより切り刻んでいくので包丁の世界では「銘切り」と呼びます。 今回はセラミック刃で銘切りが難しいため、レーザー加工で「五右衛門」の文字をあしらいました。 特徴⑥ こだわりのMADE IN JAPAN 職人の伝統技術 和包丁の魅力の一つである、持ち手の「木柄」。 今回「matou-磨刀-」では、大阪 堺にある昭和２年創業の「辰巳木柄製作所」の協力により実現しました。 「辰巳木柄製作所」では1,200種類以上の和包丁のハンドルを製作。技術はまさに職人技。 その長年培われた伝統技術と知恵をお借りしました。 お刺身を引く時の重心や繊細な力の入れ具合が影響する部分だからこそ、ミリ単位の調整を何度も繰り返し、セラミック刃との融合に成功しました。 日本から生まれた世界基準 新しいセラミック刃は、岩手県に工場をもつ「株式会社フォーエバー」とタッグを組み開発しました。 「matou-磨刀-」のこの切れ味の持続性は、フォーエバー社独自製法である高密度化、高耐摩耗性により実現したのです。 元々は粉末成形機械メーカーとして30年間の実績があり、その粉末成形機械の製造で積み上げた焼結技術は世界基準でみても先進的。 また焼結技術だけでなく、刃の削り出しもフォーエバー社の強みです。「matou-磨刀-」の複雑な形状も、繊細で高度な指先の技術によって実現。
